After all, it is a delicious fruit with lots of health benefits. For this upcoming mother’s day, I decided to surprise her with Raspberry cupcakes. Who can resist cupcakes made with your favorite fruits? No one and especially not mom.

Though it is not Raspberry season, I managed to sneak out to her freezer and get some frozen ones. I had to involve my kids in this delicate maneuver.  My seven-year-old was so excited to participate in this mini adventure. She was also eager to help with the decoration like she did for the Saint Patrick’s Day Cupcakes. It was hard to talk her out of the Wilton’s eyes, but we managed (after some bribes, sigh).

Raspberry Maple Mother’s Day Cupcake Recipe

How to make the cupcakes:

Ingredients:

Use our MAPLE CUPCAKES recipe to make the cupcake base.

Directions:

Preheat oven to 350F degrees.

Line muffin tin with 12 cupcake liners. Set aside.

Mix muffin mix as directed

Fill the 12 cupcake liners and bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.

Allow to cool.

Raspberry Frosting Recipe

  • 1 cup unsalted butter ( room temp )
  • 4-5 cups of a sweeter
  • 1/4 cup of low fat cream
  • One teaspoon vanilla extract
  • 1 cup raspberries

Directions:

  • Beat butter on med speed for about 3-4 minutes until completely smooth and creamy.
  • Add powder sugar, cream and vanilla while the mixer is running. Increase to high speed and beat for 1 minute. Add the raspberries and beat two full minutes.
  • Add more powdered sugar if frosting is too thin or looks wet.

Once your frosting is done, use a spoon, frosting tips or spatula to decorate your cupcakes. You can get super fancy and whip it up, or just add a smooth layer and decorate with more raspberries. Totally up to you!
