This is one of the most popular quick, cheap and easy casserole recipes for good reason- it’s usually a huge crowd pleaser. Even kids who aren’t fans of green beans will dive in for a taste! I think it’s the crunchy onions on top that do the trick!
Cheese and Corn Casserole
Another huge hit, this is a cheesy spin on a sweet corn casserole recipe.
- 17 ounce bag of frozen corn
- 1 cup of milk
- 4 eggs
- 1/3 cup of flour
- 1 tablespoon of olive oil
- ¼ teaspoon of cayenne pepper
- 1 ½ cups of cheddar cheese, grated
- Salt and pepper to taste
Preheat the oven to 400 degrees. Using a blender, add ½ cup of the corn along with the milk, eggs, flour, olive oil, cayenne pepper, salt and pepper and blend until smooth. In a greased baking dish, layer the remainder of the corn along with ¾ cup of the cheese. Then, add in the liquid mixture from the blender and sprinkle the remainder of the cheese on the top. Bake for 35-40 minutes or until cheese is puffy.
