If there’s one thing that everyone in the whole family loves, it’s pizza! What do you do, though, when you need to get out the door in a hurry and don’t want to deal with the cheesy, saucy mess? Make pizza muffins, of course! Muffins are the ultimate portable food and you can put just about anything in them. Seriously, we’ve even put fish in them! The best part: everyone can have their favorite toppings without adding much extra work (or ordering half a dozen different pizzas for half a dozen people!).
I can’t deny that pizza is one of my favorite dishes. I remember craving it the moment my wisdom teeth were pulled out and I was forced to go on a water and soup diet. That being said, I am willing to try pizza in all of different shapes and forms. This is why I turned to these Pizza Muffins for dinner the other day. Most Delicious Pizza Muffins Ever

Ingredients
- 2 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon dried basil leaves
- 1/2 teaspoon dried oregano
- Pepperoni (leave this out if you want to make this a vegetarian recipe)
- Black olives
- 2 tablespoons white sugar
- 2 1/2 cups shredded sharp Cheddar cheese, divided
- 4 green onions, chopped
- 1 egg, beaten
- 1 1/2 cups buttermilk
How to make it:
- Preheat oven to 375 degrees F. Grease muffin cups or line with paper muffin liners.
- In a large bowl, combine flour, baking powder, baking soda, salt, basil, oregano and sugar into large bowl; stir until well blended.
- In another bowl beat egg, whisk in buttermilk and stir until combined.
- Combine dry and wet ingredients
- Add rest of ingredients: pepperoni, half of cheese, black olives and onions
- Spoon batter into muffin tins until half full. Sprinkle remaining 1 cup cheese on top of muffins.
- Bake in preheated oven for 15 to 20 minutes, until a toothpick inserted into center of the muffin comes out clean.

So what is the secret to making these pizza muffins come out flawless every time? It’s actually pretty easy! Just do not over-mix the ingredients. You want to do it by hand and stir only until combined. If you over-mix, you’ll get denser muffins. It’s okay to leave little clumps!
These Pizza Muffins were so scrumptious but not too heavy or filling. I liked how the fluffy ‘muffin’ acted as the pizza crust, giving it a new twist to the crispy texture I am so accustomed to. The black olives and mini slices of pepperoni also gave it a good balance of saltiness without overpowering the muffin. All of the flavors were well balanced and it was a hit in my household.
