If there’s one thing that everyone in the whole family loves, it’s pizza! What do you do, though, when you need to get out the door in a hurry and don’t want to deal with the cheesy, saucy mess? Make pizza muffins, of course! Muffins are the ultimate portable food and you can put just about anything in them. Seriously, we’ve even put fish in them! The best part: everyone can have their favorite toppings without adding much extra work (or ordering half a dozen different pizzas for half a dozen people!).

I can’t deny that pizza is one of my favorite dishes. I remember craving it the moment my wisdom teeth were pulled out and I was forced to go on a water and soup diet. That being said, I am willing to try pizza in all of different shapes and forms. This is why I turned to these Pizza Muffins for dinner the other day. Check out the video, then read on for how to make them. Don’t forget to print out the recipe card for later!

So what is the secret to making these pizza muffins come out flawless every time? It’s actually pretty easy! Just do not over-mix the ingredients. You want to do it by hand and stir only until combined. If you over-mix, you’ll get denser muffins. It’s okay to leave little clumps!

These Pizza Muffins were so scrumptious but not too heavy or filling. I liked how the fluffy ‘muffin’ acted as the pizza crust, giving it a new twist to the crispy texture I am so accustomed to. The black olives and mini slices of pepperoni also gave it a good balance of saltiness without overpowering the muffin. All of the flavors were well balanced and it was a hit in my household.

We are serious pizza lovers in this house and love it in all shapes and sizes. My kids will love these in muffin form especially! Cant wait to whip them up.

  7. We’re all big pizza fans here. This is a very creative idea, I’ve never seen pizza muffins done like this (only English muffins).

You make it seem so easy to zip zip zip and put together these muffins, but I am challenged . I don’t think I’ll be making them on a school night but they look great.

  9. This would make a great brunch muffin to add. We are huge pizza people and never thought of a muffin, although we would need to use muzz since they’re all Italian.

  10. Pizza muffins are so yummy! I make them all the time, but they still haven’t given us that certain something that I’ve had in other muffins. I can’t wait to try these.

  11. It looks good. I think I might try it with mozzarella cheese, to make it more like the pizza my nephews would recognize. (I like cheddar, too, though…maybe I’ll sprinkle some cheddar on few for me, lol.)
