Energy-Boosting Delicious Warm Lentil Salad Recipe from My #CulturedKitchen

Need an energy-boosting lunch recipe to keep you going all spring long? You’ll love my warm lentil salad recipe! So delicious and easy to make! Did you know that 2016 is the year of the pulses? That does not surprise me at all. The pulses: (from chickpeas, lentils, peas) are delicious, nutritious and affordable. It is a great way to get the protein intake without breaking the bank. When Patak’s Canada challenged me to prepare a recipe using one of the pulses, I was excited. I already love eating lentils, chickpeas. I love them either in a salad or as a burger patty or in a soup.

There are lots of ways to eat pulses. For this month’s challenge, I decided to go with a warm lentil salad. I usually eat a lentil salad after my bootcamp class. It provides me a nice kick to finish the afternoon. Besides it is light enough so I won’t be sleepy at my desk. Bootcamp classes can drain your energy! You can count on lentils and on some Patak’s  Canada Tandoori curry paste to give you your energy back. Let’s see how you can make this delicious and super easy warm lentil salad recipe.

What are Pulses?

pulses include dried peas, soybeans and peanuts. Pulses are part of the legume family, which is why you see so much crossover between them!

First, maybe you’re wondering, what are pulses? As I mentioned above, some examples include chick peas and lentils. Other pulses include dried peas, soybeans and peanuts. Pulses are part of the legume family, which is why you see so much crossover between them! The word refers to the dried seeds from the legume family. These pulses aren’t just delicious, they’re high in fiber, minerals such as iron, zinc, and phosphorous and vitamins like folate and other B-vitamins.

Warm Lentil Salad Recipe

Ingredients

  • 2 Tbsp of olive oil
  • 1/2 red onion diced
  • 1/4 cup of red pepper diced
  • 1 tbsp of Patak’s Canada Tandoori curry paste
  • 2 Tbsp of lemon juice
  • 1 1/2 cup of  fully cooked lentils. You can use canned one but make sure to drain them
  • 1/4 cup of parsley leaves washed and cut

Make it

  • Heat a pan
  • Add olive oil
  • Add onions and peppers. Saute for few minutes until tender
  • Add Tandoori paste and stir
  • Add lentils and saute for few minutes
  • Switch the mixture in a serving bowl
  • Add parsley
  • Mix
  • Add lemon juice and mix.
  • Enjoy.

As easy as that. I love the combination of curry and lemon. It adds a nice flavor to the salad. My husband enjoyed this salad and even asked for more. The Tandoori paste is not too spicy and it is perfect for young pallets too. This curried lentil salad is sure to become a staple in our home!
