Summer food is about BBQ and light summer salad recipes. Fire up the grill and enjoy some delicious grilled meat. Toss some fresh vegetables and you have a sumptuous, colorful and healthy salad recipe. But the summer menu can get a little boring if you are not creative with the spice and dressing. I mean, there are only so many different types of meat to grill and ingredients to put in salad. Still, with those basics, you can really get creative with the seasoning and dressing. Today I am using BlueDragon  spices to spice up the chicken and salad. I have used BlueDragon before in this  salad recipe and in a delicious coconut stir fry recipe.

Today’s healthy recipe is grilled chicken drumstick and a salad recipe. Let’s see how you can spice up your menu with Blue Dragon spices!

Healthy Recipe: Grilled Chicken and Cottage Cheese Asian Summer Salad with Sweet Chili Dressing

Grilled chicken healthy recipe:

Ingredients

Chicken drumstick (depending on how many people are around the table, aim for at least 2 drumsticks per person)

Seasoning:

  • 2 TBSP Nuoc Cham dipping sauce
  • 2 TBSP Dijon Mustard
  • Salt and pepper
  • 1 TBSP olive oil

It’s better to season the meat at least 12 hours in advance. It will be juicier.

Grill for at least 20 minutes or until it is no longer pink!

Cottage cheese summer salad recipe with sweet chili salad dressing

I discovered cottage cheese a few weeks. I have never paid attention to this cheese as I did not like the texture and did not know how to use it. Until one day, I saw one of my friends adding it to her salad. I thought it was a nice twist to the recipes and it added a healthy spin to them. As much as I love cheese, I try not to eat them regularly as they can have lots of fats. But with the cottage cheese, I am guilt free (or almost).

Ingredients for this healthy recipe

  • Lettuce washed and shredded
  • 1/4 cup of cherry tomatoes diced
  • 1 cucumber washed and sliced
  • Optional: I added a kiwi

Dressing

  • 1 cup of cottage cheese
  • 2 to 3 TBSP Blue Dragon Sesame Oil
  • 2 TBSP Of Sweet Chili Dressing
  • Salt and pepper

Make it:

Nothing easier than preparing a summer salad: toss all the ingredients and top with the dressing. I like stirring the cottage cheese into the salad. It adds a refreshing taste and consistency to the salad.

  3. I like cottage cheese, but I’ve never thought of using it as a dressing or of adding it to a green salad. Sweet chili sauce is one of my favourites, so you caught my attention — but where does it figure into this recipe?
