Hawaiian Baked Potato Skins

Ingredients:

This Hawaiian potato skins recipe is a tasty gluten-free twist on Hawaiian pizza! Makes a unique Thanksgiving side dish or appetizer for your Christmas party!

  • 6 medium sized Russets Potatoes
  • 3 tablespoon of melted Butter or Olive Oil
  • 1/2 cup BBQ sauce
  • 1 cup of shredded Mozzarella Cheese
  • 1 cup of Pineapple chunks, well drained
  • 1 cup of cubed Ham
  • ¼ cup sliced Scallion
  • ¼ cup of chopped fresh cilantro (or any other fresh herb of choice)
  • Salt and freshly cracked Pepper

How to make:

  • Prick each potato multiple times with a fork, then place them on the outer edge of the microwave turntable. Microwave on high for 6 minutes, then turn the potatoes and microwave on high for another 4 minutes.
  • Use a sharp knife to cut the potatoes in half. Use a spoon to scoop out the potato, leaving a ¼” along the insides.
  • Preheat the oven to 400 F and line a baking sheet with foil. Grease it liberally with melted butter or olive oil.
  • Brush inside potatoes with melted butter and season them lightly with salt and pepper. Place the potato skins upside down on the foiled-lined baking sheet. Brush the remaining melted butter or oil onto the outside of the potato skin. Sprinkle lightly with salt and pepper.

  • Bake for 15 minutes, or until the skin is crispy.
  • Fill each potato skin with 1 tablespoon BBQ sauce. Then top with shredded mozzarella cheese, pineapple chunks and cubed ham.
  • Bake for about 5 to 7 minutes or until cheese is melted.
  • Sprinkle with scallions and cilantro and serve hot.
