Having a hard time finding a delicious healthy recipe for barbecue season that sets you apart from the rest of the potato salad crowd? You HAVE to try this grilled avocado with shrimp salad recipe! Trust me, you’ll be remembered as the guest who brought the most delicious and unique alternative to meat!
BBQ season is in full swing in our home. I use the BBQ at least 5 days a week: From burgers, to steaks, to grilled chicken. That’s a lot of meat: it is not always a healthy choice and can get pretty expensive. That’s why I am trying to come up with BBQ meals that do not involve meat. Not an easy task but there are quite few ideas out there.
Since I am a huge avocado fan, I decided to grill it. I have never done it before and I thought it would be a nice twist. But avocado by itself can be a little bit plain. I decided to add some grilled shrimps. The combination of these 2 ingredients is so good. I have tried it before in a delicious avocado shrimp salad recipe and kids loved it. Of course I added one of my favorite ingredients: Blue Dragon Hoisin sauce with a North American condiment: Mayonnaise. Interesting, right? Let’s see how you can make this delicious grilled salad recipe in less than 15 minutes.
Grilled Avocado with Shrimp Salad Recipe
Ingredients
- 1 Haas Avocado
- 1/4 cup of cooked shrimps.
- 1 lemon
- 4 TBSP cup of Blue Dragon Hoisin Sauce
- 1 tsp of Mayonnaise
Make it
- Cut the lemon in half. Save one for the grill and juice the other half.
- Put the shrimps and half lemon into skewers
- Grill them for few minutes. Let them cool and remove them from skewers.
- Cut the avocado in half
- Remove the seed
- Brush the inside with some of the Hoisin Sauce
- Gently place cut side down on grill over hot coals for 2-3 minutes. Let it cool
- In the mean, mix the rest of Hoisin sauce, mayonnaise and lemon juice.
- In a bowl, season the shrimps with the mixture above.
- Fill the half avocado with the shrimps seasoned.
Enjoy. Isn’t it a delicious way to eat an avocado. The presentation is wonderful so is the taste. The combination of Hoisin sauce and mayonnaise enhanced the flavor considerably. This grilled avocado recipe is perfect for your BBQ gathering, father’s day parties or just for everyday meal. It is simple, easy to make.
