
This Coconut Curry One Pot Lentil dish is perfect for both my hubby and friend. My husband loves it since it’s packed with proteins and lentils happen to be one of my best friend’s favorites! Win-win! Making this dish is a breeze since it’s classified as “one-pot,” meaning I can throw all of the ingredients together and let it cool while I do other household tasks. Be careful though, because it does get dry fast. I suggest going back and forth to it and adding more liquid as needed. You don’t want all the lentils to stick to the bottom of your cooking pot!

Coconut Curry One Pot Lentil: An Affordable Vegetarian Recipe

Ingredients:
- 1 cup brown lentils, rinsed and drained
- 2 cups coconut milk
- 1 1/2 cups vegetable broth
- 1/2 tbsp of curry paste
- 2 medium russet potatoes, peeled and cut into 1/2-inch cubes
- 2 tbsp. olive oil
- 1 cup frozen peas
How to Make:
Mix your lentils together with the coconut milk, broth and curry paste in a medium saucepan and bring to a slow boil (keep the heat around medium-high). Once it boils, turn the heat down to a simmer and cover loosely with a lid. Let cook for 15 minutes, stirring occasionally.
Add the potatoes to the mixture and put the lid on completely. Cook for 10 minutes, then stir in the olive oil. If you notice that the mixture is getting too dry, you can add a bit more olive oil, coconut milk or broth.
Mix in the peas and cover, cooking for another 5-10 minutes, or until the potatoes and lentils are tender. Again, if it gets dry, add a bit of liquid. Just don’t let it get too watery.
Remove from heat and serve! You can top it with pepper if you prefer.
