Looking for an easy recipe for dinner that you can make either on the grill or the stove? I’m loving these chicken skewers right now! They’re simple to put together and please even my pickiest eaters. Did you ever notice that kids are more likely to try something new if it’s on a stick? There’s just something about kebabs that make everyone want to try them. I love this chicken recipe because it doesn’t leave many dirty dishes. Pile them up on one big plate and the family can just grab and go! Let’s check it out!

Ingredients

  • 4 medium-sized chicken breasts
  • 4 vegetables of your choice (we chose mushrooms, yellow bell peppers, onions, and cherry tomatoes for today’s recipe)
  • Your favorite dipping sauce (we prefer tzatziki or ranch)
  • 8 metal skewers

Yields 8 BBQ skewers

How to Make this Easy Recipe for Dinner:

1. Start by cutting your chicken breast into 1-inch cubes. Simmer on medium heat in a grill pan for about 5 minutes to pre-cook the meat.
2. While your meat is simmering, cut your vegetables into 1 – 2-inch slices (depending on what vegetable is used) – just make sure that they’re the right shape for sliding onto the skewer.
3. Remove your chicken from the store. Start up the BBQ and place your vegetables and chicken on each skewer, alternating between the veggies and meat. Grill on the BBQ for about 15 minutes, making sure to turn them over so that they’re evenly charred.
4. Serve with your favorite dipping sauce.

Like I said above, you can use any veggies that you choose. This is a great way to use that garden harvest! Other great choices include squash, zucchini or cucumbers. Here’s a great idea if you’re having a party: set out a bunch of different types of veggies already cut into chunks and let your guests make their own chicken skewers.

  1. I love dinners that are quick and easy. One huge favorite chicken dish that we eat is chicken tacos. I just put chicken, taco seasoning, and salsa in the crock pot and cook on low for 4 hours. When it’s done, I shred the chicken and mix it well with the salsa. You can add cream cheese into the mix if you like and then you can put it in taco shells, tortillas, or just top it over a salad. It’s a pretty versatile meal for our family.

  2. Yum. We love to make chicken skewers! The kids still like to take the pieces off and dip them in ranch, but if they eat it all I don’t mind.


  3. My kids can complain that they don’t like a dish and then I put it on a skewer and magically it’s the best dinner ever! I love this chicken skewers idea! It will be a hit!

  4. Rather than pre-cook the chicken pieces in the pan, I will put them on skewers by themselves and start them on the BBQ, The I’ll put the vegetables on skewers and start them later. This ensures the vegetables don’t burn and the chicken if fully cooked..When Serving you can take some chicken from one skewer and some vegetables from another.
