Mmmmm, you know what tastes delicious every night of the week? Butternut squash soup recipes! I did not grow up eating butternut squash as a kid, but have totally made up for it as an adult. My husband and I first truly discovered butternut squash while we were living in the south. Neither of us grew up in a house that ate it, but on a fall trip to the apple orchard while I was pregnant with my kiddo we discovered butternut squash for the first time.
This is me with the 14.5-pound squash we bought from a roadside stand. It was just too hilariously large not to buy. What do you do with a 14.5-pound squash? You make soup, lots of soup. We ate lots of squash for the next few weeks and tried many different recipes. Below are some of my favorite soup recipes we tested out and still eat today. You may want to buy some regular sized squashes unless you are throwing a big squash party.
**Butternut squash can be intimidating to peel. Slice the top and bottom off and then poke some holes in the skin. Throw it in the microwave for three to four minutes and it is much easier to remove the delicious orange squash from the peel.

Then you need the recipe for this Creamy Butternut Squash Soup with Carnation® Evaporated Milk. Slow Cooker Butternut Squash Soup with Maple Roasted Chickpeas
Sometimes on busy days it can be so useful to throw dinner in a slow cooker. This Slow Cooker Butternut Squash Soup with Maple Roasted Chickpeas from Two Peas and Their Pod is a recipe you will find on my table. I am personally a fan of butternut squash that has been roasted in maple syrup as a side dish, but I find when you take the same squash and make a soup it can be too sweet. Instead, garnish with these delish maple-roasted chickpeas that add a hint of sweet and some crunch that rounds out this recipe in a seriously delicious way!
Healthy Recipe: Butternut Squash Soup
Sometimes you may find yourself without much bread to put on the side of your soup. That’s when I make this Healthy Recipe: Butternut Squash Soup. By including potatoes, the soup is harder. This soup plays on the creaminess of the potatoes and squash, using less cream and more chicken stock for a better for your version of a classic squash soup.
Butternut Squash Apple Soup
With a hint of sweetness, apples add a burst of flavor to your everyday butternut squash soup. This version of this Butternut Squash Apple Soup from the Just A Taste is particularly delicious and includes squash, apples, salty pancetta and a nice sprinkle of curry. This soup packs some serious flavor.
Butternut Squash Chipotle Chili With Avocado
We are big fans of Mexican flavors in our house. This Butternut Squash Chipotle Chili With Avocado from Cookie + Kate is delicious and can easily be the center star for dinner. My husband would say this soup is full of “goodies” as you can scoop up a heaping spoonful of squash, beans, avocado and crunchy tortilla with each bite.
