Bear Paws Recipe with Country Crock

This e-book features 25 ways to eat greener. It was hard to decide so I asked my son (who does not like vegetables) to choose! He went for Bear Paws.

Cook Time: 40 minutes

Ingredients

  • 3 medium sweet potatoes or yams, scrubbed clean and sliced lengthwise into 1/2-inch slices. We did not find small sweet potatoes in the store. We chose large ones. It was a little harder to slice but you can manage with a good knife.
  • 3 Tbsp. Country Crock® Spread, melted. I used the spreadable sticks for this recipe!
  • 1 Tbsp. grated orange peel (optional)
  • A pinch grated nutmeg
  • 30 whole cashews (If you have someone with an allergy to nuts, golden raisins work just as well).

Directions

  • Preheat oven to 350°.
  • Arrange sweet potatoes in one layer in a shallow baking dish.
  • Drizzle Country Crock® Spread over sweet potatoes.
  • Sprinkle orange zest (if using) and nutmeg over sweet potatoes. Toss to coat.
  • Bake for 40-45 minutes or until potatoes are tender.
  • Remove from oven. Place sweet potato slices on a serving tray or individual plates. Insert three or four cashews into the end of each potato slices to resemble bear claws.

 

The recipe was a huge success! We almost fought over the pieces and everyone was asking for more. My son was proud because he helped in the cooking process. He also ate all his Bear Paws. It was an easy recipe, quick and really good. We enjoyed every slice. My son wants to cook the Veggie Wagon recipe with an eggplant and  the Lightning Bolts with cauliflower. I am so happy: my kids love the veggies with Country Crock spread!
