Looking for an easy healthy recipe with a little spice? You’ll love this Red Lentil Curry in a Mug recipe! I was spring cleaning my pantry (because it needed a SERIOUS one) and stumbled on a package of red lentils. It was about to expire and I did not want to waste it. I despise wasting food. I was about to make my favorite red lentil soup but thought it needed a spruce up. I don’t like eating the same dish over and over. Besides spring was on its way (hopefully) and I had my fair share of soups during this harsh Canadian winter.
So I turned to Pinterest for inspiration. I bet you do that and get lost as I was for some hours, sigh. Most of the red lentil recipes were soup ones. It took me quite some time to find a non-soup one. I finally stumbled on this red lentil curry from Pinch Of Yum. It sounded delicious and so easy to make. Besides I had most of the ingredients on hand, or almost.
Let’s see how I made this easy healthy recipe, or rather re-made it, because I like making things my own.
Coconut Red Lentil Curry in a Mug: An Easy Healthy Recipe
Ingredients
The original red lentil curry recipe called for more ingredients and a larger dosage of curry. It called for 2 tsp of curry past. I changed it to 1 tsp. I wanted to make sure it was not too spicy for little ones. I added a potato because my daughter loves the texture and the taste.
- 1½ cups red lentils, rinsed
- 1 potato diced and already boiled.
- ½ large onion, diced
- 2 tablespoons butter
- 1 tbsp of red curry
- 1 teaspoon curry powder
- 1 glove of fresh garlic
- 1 tbsp of tomato paste
- ¼ cup coconut milk
- cilantro for garnishing
- Salt and pepper to taste
- Cook the lentils according to directions. Drain.
- Dice the potato
- In a large saucepan, melt butter. Add onions and cook until it softened.
- Add the potato and stir.
- Add the curry powder, salt and pepper, garlic, tomato paste and stir fry for few minutes
- Add 2 cups of water and let it simmer until all the spices are well blended
- Add the lentils and the cream. Let it simmer for 10 minutes. Make sure not to burn them.
- Decorate with Cilantro
- I served as is in a nice mug. You can eat it as is (my favorite way of eating it), serve with rice, noodles, or our delicious homemade garlic bread.
This healthy recipe is a hybrid between a soup and a potato mash. I like the flavors and combination. It’s perfect for a healthy lunch at home or in the lunchboxes!

I have all the ingredients, so I am going to be trying this recipe. The weather here in the North of England is very hit and miss where the sunshine is concerned, so I feel sure, when we have one of our famous grey, overcast days, your soup will be perfect.
