Blueberry Cheesecake: My Philadelphia Cheesecake of the Year

I’m the only cheesecake eater in my family, so I love preparing individual portions. It’s far less tempting for me to overindulge and nothing goes to waste. Individual cheesecakes are also super classy for parties and special events.

Check out my Blueberry Cheesecake recipe! It was inspired by the Coconut Cream Mini Cheesecakes on the Kraft Philadelphia website. You know how I love berries, so I swapped out the coconut and added fresh blueberries instead. Adds a healthy kick to it! My recipe also used heart-shaped molds.

Ingredients

  • 24 Nilla Wafers
  • 2 packages of 250g Philadelphia Brick Cream Cheese (leave it out of the fridge to soften)
  • ½ cup sugar, plus 3 tablespoons set aside
  • 2 eggs
  • 1 tbsp. lemon zest
  • 1 cup sour cream
  • Blueberries

How to Make It:

  • Preheat your oven to 350°F
  • Line your heart-shaped molds with the Nilla wafers, flat-side down.
  • Beat the cream cheese and your ½ cup of sugar until blended.
  • Add the eggs one at a time and beat until just blended.
  • Stir in your lemon zest.
  • Scoop the mixture over your Nillawafers in the molds, dividing it evenly.
  • Bake until the centres are just about set, but not quite firm. About 15 minutes.
  • Let cool completely.
  • Mix the sour cream and your sugar. Spread evenly over your cheesecakes and refrigerate until it’s firm.
  • Top with blueberries and enjoy!
