“Shake It Up” Roasted Potatoes

Ask your kids to help with this fun recipe. You can do the chopping, they can do the dumping of ingredients and the shaking of the bag! Then you can all enjoy the tasty potatoes together. 4

Total Time 50 minutes

Ingredients

  • 4-6 medium potatoes any variety
  • 2-4 Tbs extra virgin olive oil
  • 1-2 tsp cajun/creole seasoning
  • 1 bag either a gallon ziplock, or a disposable produce bag from the grocery store

Instructions

  1. Preheat oven to 375.
  2. Peel potatoes, if desired. Chop potatoes into 1 inch cubes.
  3. Add potatoes and extra virgin olive oil to the bag. Close bag and “shake it up” gently for 10-15 seconds, until potatoes are coated with the oil.
  4. Open bag and add in the seasoning. Reseal bag and “shake it up” gently for 10-20 seconds, until potatoes are evenly coated with the seasoning.
  5. Spread out evenly on a greased baking sheet.
  6. Bake at 375 for 30-40 minutes, until the potatoes are fork tender and slightly browned.

Recipe Notes

Notes: Instead of cajun/creole seasoning, use 1 Tbs dried rosemary and 1 tsp garlic powder. Or replace with ½ Tbsp each of oregano, parsley and basil.
