Fettuccine Pasta with Fresh Asparagus

  • One bunch of fresh asparagus washed
  • 8 ounces of fettuccine pasta. I prefer using fresh fettuccine pasta that I find in my farmer’s market.
  • 2 tbsp of butter
  • 1/2 cup of Parmesan cheese
  • One minced garlic clove
  • Salt and pepper to taste.


  1. Cut the asparagus lengthwise, using a peeler or a knife.
  2. Boil the fettuccine as per the instructions.
  3. In the last minute of cooking, add the asparagus.
  4. Drain
  5. Add butter, garlic. Toss.
  6. Add half of the Parmesan cheese
  7. Salt and Pepper and toss.
