Easy Vegetarian Dinner Recipe: Pumpkin Risotto


  • 1.5 cups Arborio rice
  • 4 cups vegetable stock
  • 1 tbsp olive oil2 garlic cloves
  • 1/2-1 can pumpkin puree
  • 1/2 cup parmesan cheese


  1. Cook the olive oil, garlic and sage together in a skillet.
  2. Add in Arborio rice, stirring it around in the oil mixture
  3. Add in vegetable stock, a little at a time, until it is cooked down and rice is soft (about 15 minutes), stirring frequently.
  4. Stir in pumpkin and parmesan cheese
  5. Serve!
