Mama Mancini’s brings order to your chaotic mealtimes
Since my boyfriend is the meatball connoisseur (he’s about as Italian as they get), I asked him to help me with this recipe. He lives alone and works the night shift, so he sleeps during the day. I usually spend two evenings a week with him for dinner before he goes to work. Earlier this week, we had an insanely busy evening planned. I’m talking planned to the last minute with no room for dilly-dallying, otherwise catastrophe would strike. It started with me banging on his door at 4:30 in the afternoon, yelling “honey, it’s your girlfriend, I’m losing natural light! We need to make the meatballs!” Poor guy, didn’t even have a chance to open his eyes all the way before I invaded with a camera in one hand, a bag of supplies in the other, and a totally crazed look of panic in my eyes that we would never make it through our to-do list.
He was worried because the meatballs were still frozen. Thankfully, they’re supposed to be kept in the freezer. I was worried because I thought for sure it would take a half an hour to cook them in the microwave. I breathed a sigh of relief when I saw that they take about 12-14 minutes, depending on your microwave. I planned to make a meatball sub. Sal looked at the box and said “but it’s already in the picture, don’t you want to do something a little more original?” He came up with the idea for the wrap. He’s the culinary genius in the relationship. I make really good coffee, so I started that while he started our Mama Mancini’s Meatball Parmesan Wrap recipe.
15-Minute Mama Mancini’s Meatball Parmesan Wrap Recipe
Ingredients:
- Mama Mancini’s Slow Cooked Italian Sauce and Meatballs (your choice of beef, chicken or turkey)
- Flour Tortilla Wraps
- Mozzarella Cheese (I prefer the all-natural thick-cut kind, to play off the natural ingredients in Mama Mancini’s)
Directions:
- Heat Mama Mancini’s Meatballs according to directions on the back of the carton.
- Let meatballs cool for a moment, then remove from bag and pour into the plastic container.
- Heat up your wraps for about 15 seconds
- Take three meatballs and slice them in half. Lay them flat side down in the middle of the wrap. Sprinkle with cheese.
- Add a little more sauce, but not too much or it will leak out of the wrap.
- Fold the sides of the wrap in and use a bit of sauce to seal it.
- Serve with a side salad!
You’ll have enough for two meatball wraps and still have two meatballs left over for snacking. If you want, you can also drizzle some of the sauce over top of the wrap. You’ll just have to eat it with a knife and fork. The entire meal took about 15 minutes to put together. We were out the door and on schedule with no problem. Of course, I still managed to get us behind schedule later that evening trying to find things in stores that I envisioned in my head (that, apparently do not exist), but as far as dinner went, Mama Mancini’s really came through! Both myself & my hubby worked. We had 4 picky kids to feed! I never tried these meatballs, but we have had another brand of frozen meatballs. They loved them in our pasta dishes or just as meatball sandwiches with melted mozzarella cheese on it. Quick & delicious!
