Are you looking for healthy vegetable muffin recipes for kids that are perfect for the lunch box? Look no more, this muffin recipe will be a hit in your home. Your toddler, teen and even your significant other will ask for more. While I am not a fan of hiding vegetables in my recipes, this mama must admit that serving the same straight vegetables on the table is not always welcomed with excitement. I wish I could snap a picture of my kids when they see the same baby carrots on the table. So I try to present vegetables in a creative way. Since my kids are huge muffin fans, I thought it would be a great idea to sneak in those veggies in their favorite food.

Vegetable Muffin Recipes For Kids

For this muffin recipe, I did not ask my daughter to help me out. I wanted to do a blind test. Don’t you do that? I hide in my kitchen and make sure kids are busy with homework or playing and hurry to make the recipe. It works most of the time. After all my kids eat with their eyes first. They see a muffin served in a nice dish and will bite into it. If I told them that veggies are hidden in this dish, they may not eat it. My teen is a bit more skeptical, he asks about the ingredients in the dishes but since he loves muffins, he did not this time and just grabbed one.

Ingredients

  • 1 cup of vegetables. I used frozen vegetables: broccoli, cauliflower and carrots. It is best with fresh vegetables but I did not have on hand
  • 1 cup of beef diced.
  • 1 cup of vegetable broth
  • 1 onion
  • 2 TBSP of olive oil
  • 6 eggs
  • 1/2 cup of shredded cheese. I used Swiss cheese.

Make it

  • In pot, heat oil.
  • Cook the onions until they are tender.
  • Add the beef and stir for few minutes or until it becomes brown.
  • Add the vegetable broth and let it simmer for 30 minutes or until meat is tender.
  • In your blender, mix the meat, cheese, eggs, vegetables (right from the freezer) until it becomes smooth.
  • Line muffin tins with muffin liners.
  • Make sure to add some oil to the muffin liners to avoid them to stick.
  • Scoop the mixture in the muffin tins.
  • Bake for around 20 minutes on 180 F.

It’s as easy as that. My daughter was happy to have them in her lunch box. These vegetable muffins are soft and moist. You can eat them cold or right out of the oven. Serve them with their favorite soup recipe or with some rice.

Tips

  • If you are not a beef fan, replace it with veal,  chicken or even shrimps. My daughter is a huge shrimp fan.
  • You can cook meat ahead of time in your crock pot. Freeze it and you will find it handy for future use.
  • Make a double batch and freeze them wrapped individually.

  1. I’ll have to give these a try. I’m always trying to get my daughter to eat her veggies. I also like how easy these are for a lunchbox idea. Now if I can find a recipe for veggie ice-cream, I’ll be set. :-)
