I don’t think I have to tell you that unicorns are everything right now! Just take a look at your Pinterest or Facebook feed and you’ll figure it out for yourself. I’m loving this resurgence of unicorn love. It kind of reminds me of my own childhood. If you were an 80s kid like me, I bet you remember just how popular these mythical and mystical beasts were! From movies like The Last Unicorn to stickers from Lisa Frank. Remember her? She was all the rage!

I’ve seen some pretty awesome unicorn party ideas, but I’ll be honest: I don’t feel like I can pull off half of the fancy cakes out there right now. I’m all about the easy party recipes! Unicorn sugar cookie bar recipe

Ingredients

Directions

  • Preheat oven to 350
  • In a large bowl, mix the cookie mix, butter, egg and sprinkles
  • Spray the parchment paper with cooking spray
  • Place the cookie dough into the baking dish and pat down until the cookie fills the bottom of the pan.
  • Sprinkle some more pearls onto the top of the dough.
  • Bake for 35-40 minutes or until golden brown
  • Set aside to cool while you make the frosting

Frosting Ingredients

  • 1 C unsalted sweet cream butter, softened
  • 2 1/2 C powder sugar
  • 1 tsp vanilla
  • 3-5 TBSP heavy whipping cream
  • 2-4 drops of pink food coloring
  • 1 medium star tip and a piping bag
  • purple, green and light blue edible pearl sprinkles
  • star confetti sprinkles

Directions

  • Using a standing mixer, combine all ingredients into the bowl and mix on medium speed. If your frosting starts looking like powdery rocks, add another tablespoon of heavy whipping cream
  • Mix until you see creamy stiffed peaks
  • Add the pink food coloring
  • Scoop frosting into the piping bag
  • Pipe on the frosting so that it covers the whole top of the cookie.
  • Sprinkle some star sprinkles as well as the tiny edible pearl sprinkles, all over the top
  • Repeat step with the edible pearls
  • Let cookie bars sit for 20 minutes until you cut the bars and serve.
