I’m a picky eater, especially when it comes to breakfast. It’s so hard for me to eat anything after I get up and for about an hour or two after that. Outside of that, I’m not a morning person and certainly do not enjoy cooking when I first wake up. Let’s just say, all the way around, mornings aren’t my thing. Don’t get me wrong, I can be chipper in the morning, just don’t make me use my brain, exert myself in any physical way, or offer me food and we’re solid. I’m so picky, I don’t even like coffee. Oops, I said it, don’t hate me, but it’s true.

It’s like whoever decided what foods were going to be breakfast foods knew all about me and picked all the things I just didn’t like and turned them into the most important meal of the day.  What do you do with that?! Well, I’ll tell you what I do, I make something different that includes things I actually do enjoy! In this case, strawberries and peanut butter. There’s no cooking involved here, and no hard ingredients, just throw it all in a bowl and you’ve got a breakfast! Strawberry Peanut Butter Breakfast Balls

Makes: 12-14 Balls

1. Begin by measuring out your strawberries. If they have been dried in large slices (which they usually are) then break them into small pieces.

2. In a large bowl, place all your ingredients and mix together well.

3. Once your ingredients are mixed, using your hands, take a palm full of the mixture and form it into a ball. If it’s not sticking together well, you may need a tad more peanut butter for your

mixture.

4. Place finished balls on wax paper and refrigerate for about 30 minutes. This isn’t mandatory it only allows the balls to stay put together if they’re not being served immediately.

5. Enjoy!

I told you it was easy, didn’t I? These are great not just for breakfast, but also for after-school snacks or little energy-boosters on the way to extracurricular activities. Make extras in the morning and pop them in the freezer so they’re ready to go on the way out the door! If you’re not a fan of strawberries, you can make these with just about any dried fruit. Don’t like coconut? Swap them out for grated nuts! Almonds go great with strawberry and peanut butter.
