Making adorable and delicious Easter desserts as a family is one of our favorite things to do to celebrate the holiday. The whole family gathers together in the kitchen to come up with an idea. Then we bake and decorate the day away! It is a ton of fun, and I love watching the creations my family comes up with. This Easter holiday we are making little lamb cupcakes with buttercream frosting! They came out super cute and oh-so yummy, especially thanks to my secret ingredient: Finlandia™ imported butter in the frosting!
Oh my goodness, you need to discover the legendary taste of quality butter! I’ve always been told that the butter used in baking makes a difference in the taste and texture, and they were right. Finlandia has been making cheese and butter in Finland for over a 100 years. They have perfected the taste of their butter. Finlandia only uses the purest milk from family-owned farms where the cows are treated like family.
There are no added hormones and nothing artificial in their butter. The taste is absolutely amazing. Rich, creamy and so buttery! Let’s check out how to make this easy Easter dessert. Don’t forget to print out the recipe card for later!
Easy Lamb Cupcakes Easter Dessert Recipe
For the cupcakes, we used our favorite boxed cake mix and focused our attention on making the buttercream frosting. You can use any flavor of cake mix your heart desires. Follow the directions on the box to make the cupcakes. Let the butter sit out while you make them to give it time to soften. Do not microwave the butter, it will become too soft and you will end up with a watery frosting. The butter doesn’t need to be room temperature, just soft enough that you can see an indentation when you touch it.
While the cupcakes are cooling, mix together your frosting ingredients. My kids loved used the handheld mixer and loved licking the beaters even more. Making the lambs faces are easy enough for little ones, and quick enough to keep their attention through the whole decorating process.
What You’ll Need:
- 1 dozen cupcakes
- mini marshmallows
- red edible marker
- black decorative gel
- jelly beans
Frosting Ingredients:
- 1 cup softened Finlandia Salted Butter
- 3 1/2 cups powdered sugar
- 4 tbsp. whipping cream
Directions:
1) Using a handheld mixer, or stand mixer beat the butter for two minutes until it is creamy and smooth.
2) Add the powdered sugar. It will look crumbly as it is mixed, just keep mixing until it becomes smooth.
3) Next, beat in the whipping cream for about 3 minutes. The frosting will start getting light and fluffy.
4) When the cupcakes are cooled, spread the frosting thickly over the cupcakes. Use the mini marshmallows to make the lamb shape on the cupcakes.
Leave a circle in the middle for the face. To form the ears, just cut a mini marshmallow in half diagonally. Use the red marker to color the middle of the ear.
5) Decorate the face of the lamb. Use a jelly bean cut in half for the nose, and the black decorative gel to make the face. Store in the refrigerator until ready to serve. Enjoy!
