I have a crazy kind of love for marshmallow cereal treats. There’s just something about the crunch of the cereal mixed with the ooey, gooey marshmallow that brings my taste buds such immense joy. My son, picky as he is, takes after me in that regard. We always fight over the last treat. I let him win, of course, because we parents are nothing if not self-sacrificing when it comes to our kids. Besides, it’s easy enough to whip up a new batch!
Up until recently, I was sort of a cereal treat traditionalist, sticking with the rice cereal variety. Then I started to see treats from other brands on the shelves at the supermarket. I figured if they can make them, so can I! Time to think outside the Rice Krispy box! These Kix Cereal Bars are BIG on crunch and low on time-commitment. Really, you could whip them up as your kids are walking home from the bus stop and they’ll think you spent all day making treats just for them! Kix Cereal Bars After School Snack Recipe

Ingredients
- 3 TBSP unsalted sweet cream butter
- 1 16oz bag mini marshmallows
- 6 Cups of Kix Cereal
- 1 1/2 C of dried cranberries
- 1 9×11 glass pan
- parchment paper
fitted to glass pan
- cooking spray
Directions
- Place parchment paper into glass pan and and spray the parchment paper with the cooking spray
- In a large pot, melt the 3 TBSP of butter
- Once butter is melted, mix in the mini marshmallows until they start to melt a bit
- Mix the Kix cereal and 1 C of dried cranberries
- Pour into the dish and spray cooking spay onto a rubber spatula
- Sprinkle the remaining dried cranberries onto the top of the bars
- Let harden for 10 minutes before cutting and enjoying

Oh yes, I promised you a secret, didn’t I? Here it is: making the perfect Kix cereal bars (or any cereal treats for that matter) comes down to the right marshmallows. I’ve been experimenting a lot with different marshmallows over the summer. I’ve bought every brand name and generic under the sun, and discovered that there are really only two that I could call THE BEST ever. Jet-Puffed are my top pick, but if you prefer to go with a generic, Baker’s Corner brand from Aldi’s is the one to pick. Now, I’ve also heard some ah-mazing things about organic marshmallows from my friend, but they’re like $8 a bag. Eeek, right?
The other slightly more obvious secret is the dried cranberries. They add a nice fruity flavor that balances perfect with the corn crunch of the Kix and the sweetness of the marshmallows. If you just aren’t a big fan, though, you can omit them without ruining the recipe, or try other types of dried fruits.
