Last week my daughter made a simple request: “Can we please make muffins after dinner?” In reality, I had a few other things to take care of that evening (I’m sure you can relate!). But I chose to sacrifice a half an hour to spend time with her.
She enjoys making desserts and I knew she would thoroughly enjoy eating them for breakfast throughout the week. And I’ve been experimenting with grinding my own flour, so I thought this would be another opportunity to be a scientist in my kitchen. Muffins are a fantastic comfort food. They make the best breakfast, a filling snack, and even feel like a sweet treat at the end of the day. Why not ask your kids if they’d like to help you make muffins? If you mention that chocolate chips are included, I bet they will excitedly be your assistant chef.
Hint: Make a double batch: one for now, one for the freezer. Pull these out on busy mornings or when you need a healthy road trip snack.
Grandma's Banana Chocolate Chip Muffins
These moist muffins won't last long! They have just the right amount of sweetness balanced in a hearty muffin.
Ingredients
- 1 3/4 cup all purpose flour
- 1 1/2 tsp baking soda
- 3/4 tsp salt
- 3 eggs
- 1 1/2 cup sugar
- 1 cup mashed bananas, about 2, preferably ripe brown ones
- 1/2 cup unsweetened applesauce
- 1/3 cup vegetable oil
- 1 tsp vanilla
- 1/2 tsp cinnamon
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat oven to 350F.
- Whisk together flour, baking soda, salt, and cinnamon in a bowl.
- In another bowl, whisk together eggs, sugar, bananas, applesauce, oil, and vanilla.
- Add the dry ingredients to the wet ingredients. Mix until well combined, scraping the bowl as needed.
- Gently stir in the chocolate chips.
- Line a muffin tray with paper or silicone liners. Fill each cup 2/3 of the way full.
- Bake at 350F for 15-20 minutes, until a toothpick comes out clean.
- Cool on a cooling rack.
Notes
Makes around 32 muffins.
Make a double batch because these muffins freeze well! Wrap in plastic wrap or place in a freezer safe container. To thaw: microwave on medium power for 30 seconds.
