There’s something sweet about cooking with my family. Most evenings I prepare dinner alone while my husband is at work and our daughter completes homework. But I cherish the times when they are in the kitchen with me.

Last week my daughter made a simple request: “Can we please make muffins after dinner?” In reality, I had a few other things to take care of that evening (I’m sure you can relate!). But I chose to sacrifice a half an hour to spend time with her.

She enjoys making desserts and I knew she would thoroughly enjoy eating them for breakfast throughout the week. And I’ve been experimenting with grinding my own flour, so I thought this would be another opportunity to be a scientist in my kitchen. Muffins are a fantastic comfort food. They make the best breakfast, a filling snack, and even feel like a sweet treat at the end of the day. Why not ask your kids if they’d like to help you make muffins? If you mention that chocolate chips are included, I bet they will excitedly be your assistant chef.

Hint: Make a double batch: one for now, one for the freezer. Pull these out on busy mornings or when you need a healthy road trip snack.

Grandma's Banana Chocolate Chip Muffins

These moist muffins won't last long! They have just the right amount of sweetness balanced in a hearty muffin.

Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes

Ingredients

  • 1 3/4 cup all purpose flour
  • 1 1/2 tsp baking soda
  • 3/4 tsp salt
  • 3 eggs
  • 1 1/2 cup sugar
  • 1 cup mashed bananas, about 2, preferably ripe brown ones
  • 1/2 cup unsweetened applesauce
  • 1/3 cup vegetable oil
  • 1 tsp vanilla
  • 1/2 tsp cinnamon
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350F.
  2. Whisk together flour, baking soda, salt, and cinnamon in a bowl.
  3. In another bowl, whisk together eggs, sugar, bananas, applesauce, oil, and vanilla.
  4. Add the dry ingredients to the wet ingredients. Mix until well combined, scraping the bowl as needed.
  5. Gently stir in the chocolate chips.
  6. Line a muffin tray with paper or silicone liners. Fill each cup 2/3 of the way full.
  7. Bake at 350F for 15-20 minutes, until a toothpick comes out clean.
  8. Cool on a cooling rack.

Notes

Makes around 32 muffins.

Make a double batch because these muffins freeze well! Wrap in plastic wrap or place in a freezer safe container. To thaw: microwave on medium power for 30 seconds.
