Fun Breakfast Recipes for Kids – Pig Pancakes

You can start the morning off right by making fun breakfast recipes for kids.  There is so much more than just cold cereal that you can prepare for your child for breakfast.  Even turning ordinary pancakes into something fun like pancakes in the shape of a pig is a great way to start the morning.

I used a traditional pancake recipe made from scratch to make this pig pancake.  You can use the recipe I am sharing below, use a boxed pancake mix, or add extra additions like blueberries or chocolate chips.

I enjoy butter and real Vermont maple syrup on my pancakes.  However, my daughter prefers to have them with peanut butter instead.  I even have a friend who likes to add fresh sliced fruit like strawberries along with homemade whipped cream to the top of her pancakes.  No matter what you like to add to your pancakes, your child will definitely smile when they see this adorable pig pancake.

Ingredients

    • 2 cups all-purpose flour, no need to sift this
  • 2 1/2 tsp baking powder
  • 3 tbsp granulated sugar
  • 1/2 tsp salt
  • 2 large eggs
  • 1 1/2 to 1 3/4 cups whole milk
  • 2 tbsp melted butter (don’t use margarine for this)
  • A few raisins or chocolate chips for decorating

 

Directions for the basic pancakes

      • Mix together the flour, baking powder, sugar, and salt.
    • In a different bowl, whisk together the eggs and 1 1/2 cups of whole milk.
    • Add this to the flour mixture and stir until smooth.
    • Stir in melted butter.
    • If the batter seems too thick to pour, add a little more milk until it is the right consistency.

Directions to make the pig shape (makes 2 pig pancakes)

Cook on a hot, non stick pan.  Use about 1/4 cup of the pancake batter to make two large, round pancakes. Use about 1/8 cup of the pancake batter to make two small, round pancakes.  Now make one midway in size between the large and small pancakes. Cook the pancakes until they are bubbly around the edges.  Check and make sure they are light brown on the bottom.  Flip them very carefully. When they are done, remove them to a cutting board or plate.   Cut the medium sized pancake in four, pie shaped pieces.  Place the large pancake on the bottom.  Place the small pancake in the center of the large pancake to serve as a snout.  Place 2 quarter pieces as ears at the top of the large pancake.  Decorate with raisins or chocolate chips for the eyes and nose.
