  • 2/3 C Skim milk
  • 1 package of Hot Dogs (cut in half)
  • 2 C of shredded cheddar cheese
  1. Preheat the oven to 400 degrees and deeply spray a cupcake pan with cooking spray or line the pan with cupcake liners
  2. In a large mixing bowl, combine the corn bread mix, milk, eggs and cheese
  3. Mix in the cheese
  4. Using a large ice cream scoop, scoop the batter into the cupcake pan
  5. Place a hot dog into the center of the cornbread mix
  6. Place into the oven and bake for 16-20 minutes or until golden br

A few tips. First, you can use any cornbread mix, we just prefer Jiffy. You can also use any type of hot dogs. Both my son and I eat turkey or chicken dogs. My husband only eats beef. If you’re making this for your family and everyone eats a different type of hot dog, just color-code with cupcake liners. For example, use blue for beef and red for turkey.
