When you’re a work-at-home-mom with very little time to cook in the middle of the day, it’s tempting to just toss your kid a snack cake and let him run off to unwind before doing his homework. Of course, you already know that’s not a great idea, but what are you going to do when you barely have time to feed yourself during the day?
That’s where this easy cheddar cornbread dogs recipe comes in. It only takes a few minutes to put together, then the oven does the rest of the work for you. It’s great for hectic days when you need to get your kids out the door to after school activities. Make them before they get home and they’ll be ready to go with you! Check it out! Cheddar Cornbread Dogs After School Snack Recipe

Ingredients
- 2 packages of Jiffy Cornbread mix
- 2 large eggs
- 2/3 C Skim milk
- 1 package of Hot Dogs, cut in half
- 2 C of shredded cheddar cheese
Directions
- Preheat the oven to 400 degrees and spray a cupcake pan with cooking spray or line the pan with cupcake liners
- In a large mixing bowl, combine the corn bread mix, milk, eggs and cheese
- Mix in the cheese
- Using a large ice cream scoop, scoop the batter into the cupcake pan
- Place a hot dog into the center of the cornbread mix
- Place into the oven and bake for 16-20 minutes or until golden brown
- Once done, let cool for a few minutes before enjoying!

A few tips. First, you can use any cornbread mix, we just prefer Jiffy. You can also use any type of hot dogs. Both my son and I eat turkey or chicken dogs. My husband only eats beef. If you’re making this for your family and everyone eats a different type of hot dog, just color-code with cupcake liners. For example, use blue for beef and red for turkey.

We use Jiffy Corn Mix for our corn dogs and I’ve never thought of using them like this. The sweetness of Jiffy Corn Mix makes for perfect corn dogs. Your recipes look creative, fun AND tasty. Adding them to my recipe box.
