I respect it in all of its forms, shapes, and flavors. I think that’s pretty clear, since I shared another delicious recipe last week: these pepperoni pizza crescents!

I remember begging my mom for pizza nearly every night and while she needed to restrain and often say no, there were times where she would make it and I’d be the happiest kid on the block. My mom’s pizza crust was perfected to a tee but I absolutely adored it when she made her simple, English muffin pizzas. As an after-school snack, she would put together cheese and some of my favorite toppings so that I could enjoy my favorite meals without getting too full before supper.

Today, I decided to whip up an English muffin mini-pizza – inspired by my mom’s! They are simple and quick, and with the right ingredients, you can make them into a fairly healthy after-school food item. Enjoy!

English Muffin Mini Pizzas: A Perfect After School Snack

Ingredients

  • 4 English muffins (preferably, whole wheat)
  • 8 tbsps tomato sauce
  • 1 cup grated sharp cheddar cheese
  • Your favorite toppings (we kept it simple and made it a vegetarian pizza with black olives)
  • Non-Stick pan

How to make:

1. Preheat oven to 400 degrees Farenheit

2. On a non-stick pan, cut English muffins in half and place facing up. For each English muffin, you’ll need about 2 tbsps of tomato sauce. Spread on each piece of bread.

3. Top sauced English muffins with cheese and the toppings of your choice.

4. Bake in oven for 8 to 10 minutes.

If you have a larger family, just increase the amount of the ingredients! As I mentioned above, it’s super simple to customize this snack recipe to your kids’ tastes. Other topping ideas include pepperoni, little sausages, mozzarella cheese (for a more traditional pizza), peppers, and pretty much anything you would put on a large pizza. If you want to spice things up for the grown-ups, try using hot sauce in place of the tomato sauce, then adding a bit of ranch dressing and pieces of precooked chicken for a buffalo chicken English muffin pizza! The options are endless, but the cleanup is quick!

  1. We love to make english muffin pizzas for snack. The kids like to make their own with all the toppings they love. I am always looking for new snack ideas to try.

  2. Those are cute. I used to have pizza for breakfast every once in awhile when I was younger. This snack muffin made me want one now and it’s 7 in the morning. ;)

  3. I never thought to use english muffins to make mini pizza’s but this is a great idea. I can taste it now, soft center, a little crunch around the sides, yummy! I’m looking forward to making this recipe.

  4. These mini pizzas are an awesome after school snack! And if you ever decide to make this during the weekend, I’m sure the kids will be happy to help out, they can even choose what toppings to put on their pizza! That’s a lot of fun right there.
