Looking for a delicious low calorie dessert? Check out this amazing Blueberry Scone recipe! A scone is a small, lightly sweetened biscuit-like cake. It is not as light as a traditional cake but it is sweeter than a biscuit. Scones are served often in both Scotland and England and since I have ancestors from both of these countries, it’s a healthy fruit dessert that I’m very familiar with. I normally end each evening with a cup of tea. It’s light with just a hint of sweetness so it doesn’t leave you feeling over full.
I make my blueberry scone recipe in a scone pan. Using a scone pan is the easiest way to get triangular shaped scones. However, if you do not have a scone pan, you can simply roll the dough in a ball and then pinch off small bits of the dough and shape them into triangles by hand. Just try to get them all the same size so that the cooking time for each blueberry scone is the same. While I created this low-calorie dessert scone recipe using blueberries, you could also make it with raspberries or blackberries depending on what is ripe at the moment.

Low-Calorie Dessert Blueberry Scone

Ingredients for this healthy low-calorie dessert:
- 2 cups of flour
- 1/4 cup sugar
- 2 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 cup low fat milk
- 1/4 cup butter, cold not softened
- 3/4 cup fresh blueberries (not frozen)
Directions to make this Blueberry Scone recipe:
- Preheat the oven to 400 F.
- Mix all of the dry ingredients together (flour, sugar, baking powder and baking soda).
- Cut in the butter.
- Very carefully, fold in the blueberries being certain not to squash them.
- Gently stir in the milk being careful not to damage the blueberries when stirring.
- I use a scone pan to make this blueberry scone recipe. A scone pan makes each scone the same size and shape. If you are using a scone pan, spoon the dough into each compartment.
- If you do not have a scone pan, you can shape each scone into the same size triangle and place each scone on a non-stick cookie sheet or in a non-stick scone pan.
- Bake for about 10 minutes.
- Let the scone cool for a minute and then remove carefully.
- Scones can be enjoyed either cold or warm. If they are warm, you can spread them with butter. When they are cold, I enjoy them with jam.
