St. Patrick’s Day is coming up. Time to break out the green and celebrate the luck of the Irish! Looking for a perfect St Patrick’s day recipe? Try this easy and healthy appetizer dish: zucchini bake!

This zucchini bake St. Patrick’s Day recipe is made from fresh ingredients that will please every palate in your home! I am not usually a huge fan of zucchini because it does not have a strong flavor! I used to cook it only during the summer on the BBQ with olive oil and salt! But I recently stumbled up on this easy healthy recipe and thought I’d give it a try! After all, if we do not try new things, we don’t evolve!

Zucchini Bake St. Patrick’s Day recipe

Ingredients for this easy healthy recipe:

  • 2 cups of shredded zucchini
  • 1/2 cup of shredded cheese.  I prefer mozzarella, but you can use any type of shredded cheese that you enjoy. Cheddar goes well too!
  • 2 eggs, beaten
  • 1 onion, also shredded
  • salt and pepper if desired

 How to make it

  • In a large bowl, mix zucchini, onion, egg and cheese!
  • In a greased shallow baking dish, add the mixture
  • Bake for 15 minute on 350F

That’s all it takes! Let it cool for a few minutes, then scoop into festive green bowls and enjoy! While we enjoy this recipe as an appetizer along with a heartier dinner recipe, like our slow cooker beef stew, you can also eat it as your main dish. Finish off with a delicious low-cal dessert like my yummy pound cake recipe! You can easily turn that into a fun St. Patrick’s day recipe by adding some green food coloring to the mix. No one said it had to be a traditional Irish recipe to celebrate the holiday. Feel free to get a little creative and add your own tastes to the meal!
