Healthy Valentine Cookies with #EqualCanada

I love cooking with kids. I find it is a great family activity where we have lots of fun and the kids learn great skills. They learn how to measure the ingredients, how to shape the dough! Whenever I find the chance, I cook with them. Valentine’s Day is a great opportunity to do so. For this special event, I decided to make heart-shaped chocolate chips. But since we treated ourselves with so many sweet desserts during the holiday season, I decided to cut back on sugar.  Equal sweetener is a great alternative for sugar.

I checked EqualCanada facebook page and discovered this great Chocolate chip recipe!  I needed either Equal granular or Packets. I noticed also that Equal offered a new packaging : Yellow Equal Canister.  It has 275g and is equal to 5lb of sugar. Besides it is on rollback for $7,97 as compared to $9.97. That would be perfect for this recipe.

So on this Thursday evening, I decided to go shopping for my missing ingredients at Wal-Mart. I go to this store at least twice a month because it has great deals. Before going out I always check the stores’ flyer and deals. I did not find Yellow Equal Canister in the flyer.

It was a mild day. The kids were at school. I decided to go shopping for my ingredients and surprise them when they get back home. I needed Equal Yellow canister, cookie shapers and flour.

The Valentine’s shelves were very tempting and nicely organized. I was looking for heart-shaped cookie shapers. The price was interesting: 2 for $1.79.

Then I headed to the cake and muffin area looking for Yellow Equal Canister. I thought it would be in this area but I did not find it. I looked in other shelves but could not find Equal. I had to ask an employee for guidance. He told me I can find Equal in the pharmacy department. A strange place to store them.

Surprise: No Yellow Equal Canister. I only found the The 57g Equal  Granular and the 200 unit Equals Packets. They were in the middle of the shelf next to other brands.  The 200 Equal Packets is $8.23 which is less expensive than other brands (200 units for $9.97). Besides the package is less wider than the other brands which takes less room in my pantry.

I was confused for a moment because I did not know which item to choose for my recipe.  I decided to buy the 200 packets! It sweetens like 2 teaspoons of sugar. My 4-year-old will be thrilled to open the packages.

Then I went to look for my missing ingredients: flour and headed to the express checkout.

I was disappointed because I did not find the Yellow Equal Canister. So I will have to head to another Wal-Mart tomorrow and look for it!

When the kids came back, they were excited to find all the following ingredients on the table. As I predicted my 4-year-old was happy to open the packets.

Here is the recipe from Equal Facebook Page.

Ingredients:

  • 1/3 cup stick butter, softened
  • 1 egg 1 teaspoon vanilla 1/3 cup Equal® Spoonful or Granulated*
  • 1/3 cup firmly packed light brown sugar
  •  3/4 cup all-purpose flour 1/2 teaspoon baking soda 1/4 teaspoon salt 1/2 cup semi-sweet chocolate chips or mini chocolate chips*May substitute 8 packets Equal sweetener

Directions

  • Beat butter until fluffy. Beat in egg and vanilla until blended. Mix in Equal® and brown sugar until combined.
  • Mix combined flour, baking soda and salt. Stir into butter mixture until well blended. Stir in chocolate chips.
  • Drop dough by rounded teaspoons onto ungreased baking sheet. Bake in preheated 350° F oven 8 to 10 minutes or until light golden color. Remove from baking sheet and cool completely on wire rack.
