Your heart will grow two sizes for sure when you bite into these yummy Grinch cookies! Trust me, your own little Whos are going to love this fun Christmas dessert recipe!
The Grinch holds a special place in my heart. It’s one of the first Christmas movies that I remember watching as a kid, along with A Charlie Brown Christmas. Not to get all “in my day” on you, but back then we had to wait for the specials to come on television. My son will never know what it is like to wait all year to watch his favorite holiday specials, to know that if he misses them, he has to wait until next year. He thinks nothing of popping in a Christmas movie in the middle of March! I’m totally okay with that, though. Sometimes you just need a little Christmas in the middle of the year, right?
Anyway, I digress! Back to these crazy fun Grinch cookies! If you’re looking for a super simple Christmas dessert that the kids can help make, you can’t go wrong with these. Since they’re bar cookies, you really can’t get them wrong. While my mom makes like 18 different types of cookies in all sorts of magical shapes, I am really only accomplished at making bar and drop cookies. Let’s check out the recipe, shall we? Grinch Cookies Christmas Dessert Recipe

Ingredients
- 1 C unsalted sweet cream butter, softened
- 1 1/2 C powder sugar
- 1 egg
- 2 tsp vanilla
- 2 1/2 C flour
- 1 tsp baking soda
- 1 tsp cream of tartar
Frosting ingredients
- 2 C unsalted sweet cream butter, softened
- 3 C powder sugar
- 1 tsp vanilla
- 3 tbsp heavy whipping cream
- 3-5 drops of green food dye
- edible red heart icing transfers
Base Cookie Directions
- Preheat oven to 325 degrees
- Tear off a sheet of parchment paper long enough to fit a 9×13 baking dish
- In a standing mixer, combine butter, powder sugar, egg and vanilla and mix on medium speed until combined and fluffy
- In a large bowl, combine the flour, baking soda, and cream of tarter.
- Gradually add in the flour to the wet mixture and mix on low speed until combined
- Scoop dough into the baking dish and press down with your fingers
- Bake for 20-25 minutes or until golden brown
- Place onto a wire rack to cool completely
Frosting directions
- Using a standing mixer, combine all ingredients (except the food dye and heart transfers) and mix on medium speed until combined and stiff peaks.
- Add in the food dye and mix until color is combined
- Scoop the frosting onto the cooled cookie bars and frost
- Place the bars into the fridge for 30 minutes to an hour for the frosting to harden
- Use a sharp knife and cut into bars
- Place the hearts into the middle of the cookie bar

Cute and easy, right? While we used edible icing transfers for the hearts, if you’re handy with a frosting bag you can totally free-hand them if you want.
