Have you ever tried steamed mussels with tomato and curry? SO good and surprisingly fast to make! Let’s  be honest with each other: having dinner ready in less than 30 minutes is ALWAYS a challenge.  Either you end up cooking the same thing over and over, you order take out or you grab some sort of frozen or boxed meal.

While I was still enjoying the last lazy summer days with some moms at the pool, we were all worried about back to school and the schedule. Between school lunches, extra curricular, homework and our jobs, it was always hard to fit the cooking in the schedule. Most of the working parents have less than 30 minutes to feed the starving crowd. But here I come to the rescue  with this delicious steamed mussels with tomato and Blue Dragon Thai Red curry paste. It is easy, fast,  delicious and cheap. You can buy 4 pounds for $6.

Steamed Mussels With Tomato and Blue Dragon Curry Paste

My kids and I can eat sea food every day of the week. From lobsters, to shrimps, to mussels, we love it all. My daughter wants to move to New Brunswick  when she gets older because she can have access to fresh sea food. Mussels make it to our list of favourite sea foods. We eat them at least once a month. Kids are always looking for this dish and they love getting a little messy removing mussels from the shells. It is funny to watch. This musseles recipe does not use wine, which is perfect for me.

Ingredients

Steamed Mussels With Tomato and Blue Dragon Curry Paste

  • 4 pounds of cleaned (scrubbed and debearded) mussels. I always buy clean PEI ones from the store. Cleaning mussels is a daunting task.
  • 1/4 cup of olive oil
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 cup of fresh tomato crushed in your blender
  • 2 tsp of Blue Dragon Curry Paste.
  • Salt And Pepper to taste

Make it

I prefer using a large pot like this one:

  • In your large pot, add olive oil, onion and garlic. Let it cook until onions are tender. It takes around 5 minutes.
  • Add tomato, Blue Dragon Curry Paste, salt and pepper.
  • Let it cook for around 5 minutes
  • Then add 1 cup of water.
  • Let it cook for around 15 minutes or until it boils.
  • Add the mussels,
  • Cover, bring to boil.
  • Cook for around 3 minutes or until mussels are open. Make sure to shake the mussels while cooking so they cook evenly.
  • Remove the open mussels.
  • Continue cooking the rest for another few minutes.
  • Discard the mussels that did not open

Voilà.

As easy as that. I loved the spiced up notch of Blue Dragon Curry Paste. It was just perfect to give a nice flavour to the mussels and not too strong for kids. They loved it. All the process takes less than 30 minutes. You can serve them with homemade sweet potato chips, your homemade garlic bread.

  2. I have never tried Mussels before. This looks like an easy recipe to make. I will have to try it when my Sister visits next.
