Egg sandwich fans: you will love my spin on this easy lunch recipe! My son, who is a huge fan, cannot get enough of it! I bet you are curious how I could make any changes to this lunch idea? I just Mixed in A Little India to it! I added Mango Indian Style Pickle! My family and I are huge fans of pickles and especially the Patak’s Canada one. They enhance any sandwich or appetizer. I have been testing them for over a year, and they became a staple in our home. I use them as a spread on slices of bread, crackers or even as a spice in some of my meals! They are spicy enough to add flavour to any dish, yet not too spicy for my kids! Those little jars are very popular in our home! So when Patak’s Canada challenged me to create an easy lunch idea for the family, pickles were my first choice! Let’s see what I made! Don’t forget to print the recipe card for later!

Egg  Sandwich with Patak’s Canada Pickles

It yields one to two sandwiches, depending on how generous you are with the spread.

Ingredients:

  • 2 hard boiled eggs. Ideally for 10 minutes
  • 1 tsp of Mango Indian Style Pickle
  • 2 slices of bread!

Make it

  • Peel eggs and chop
  • Place the eggs in a bowl and add the pickles

  • Mix well
  • Add salt and pepper to taste. I did not feel the need to add because this pickle has already spices: Mustard, salt, etc!
  • Spread on the bread!

If you notice, I did not toast the bread! Since it is a packed lunch, I prefer not to, as toasted bread is better served hot! As I mentioned above, my son is a huge fan of this lunch idea! He finds it filling and spicy enough for his palate. This pickle is not too hot! If you want to turn up the heat level, use this version instead!

  3. I must say I’ve never heard of Pataks Canada Mango Indian Style Pickles but I will be on the look out for it because it looks and sounds like it’s bursting with flavor! I can see myself using this in a potato salad and tuna sandwich. Also over some rice and shredded chicken!
