Now that Thanksgiving is behind us here in Canada and the feast is over, I bet you have some turkey leftovers staring at you in the fridge. How are you going to use those leftovers? I will tell you how: A delicious hearty turkey stir fry that everyone will fight for it. Like you, I had a gigantic turkey leftover from our holiday meal. Since I don’t like wasting food, I wanted to use this leftover in a delicious creative way. A delicious recipe that may look like take out (although I find it is way better) but made from simple ingredients that I had. And most of all seasoned with a delicious Blue Dragon stir fry sauce.
Now prepare your woks and let’s get started. You will see how East is made Easy with Blue Dragon. I bet you will never order take out again after trying this turkey stir fry!
Sweet & Sour Spaghetti Squash & Turkey Stir Fry Recipe
This recipe was inspired from the Blue Dragon website. Since I like changing some things around (okay maybe more than a few things), I replaced the mushrooms with broccoli (because I did not have mushrooms on hand), the chicken with turkey and the noodle with squash (Okay okay it is more than changing a few things around). I just like changing things and being creative.
My point is: use things you have around at home. Make it easy on you. If you don’t have mushrooms, use another vegetable you have around. If you don’t have chicken, replace with another white meat: turkey. But make sure to use the Blue Dragon Sauce as it adds such a flavor to the meal and texture. You need to have it to get a delicious recipe. Now let me stop the talking and share with you my turkey leftovers recipe.
Turkey Stir Fry Recipe Details
- Yields: 4 to 6 servings
- Preparation time: 10 minutes
- Cook time: between 35 and 45 minutes (depending on the squash).
Ingredients
- 1 tbsp of vegetable oil.
- 1 cup of turkey: cut in cubes or matchsticks
- 1/2 cup of broccoli
- 1 Spaghetti squash
- 1 Blue Dragon Sweet and sour stir fry sauce
Make it
- Preheat oven to 350F
- Cut squash in half. Scoop out and discard seeds
- Place each half (side down) on a baking sheet. Bake until it is tender. It usually takes 30 minutes. Some squash takes longer. Let it cool and scoop it. Discard the shell.
- Heat a large wok. Add oil and turkey. Let it cook for 1 minute (remember, the turkey is already cooked, you just wanted it heated).
- Add the broccoli and the squash threads
- Pour over the sauce and let is simmer for 1 minute
Tip: To cut on your cooking time, the squash can prepared ahead of time (1 or 2 days before and store in a container in the fridge). So when you are ready, just toss everything in a wok and heat.
So my wok stars, how do you like this turkey stir fry recipe? You can serve this in small individual bowls. My kids love those bowls because they feel they are in a restaurant. I personally love serving it right in a a squash. It is fancier. The Sweet and Sour stir fry adds such a flavor. Turkey can get too dry: the sauce will make it moister and most of all : delicious.
Isn’t it better than take out? I am not a fan of take out: it is not always healthy. It can get expensive and most of all your house smells odd after. Don’t you agree? I prefer to stay in and enjoy an easy healthy meal made from simple ingredients that I have on hand. The above recipe took less than 30 minutes to prepare. Don’t you have 30 minutes to spare for your health and food. I am sure you have.
