As the weather cools down, our calendars heat up. From back to school season to Halloween to the holidays, once Labor Day hits, my family starts going nonstop and there’s no end in sight. This usually means I’m eating lunch on the go, which makes eating healthy a challenge! I’ll be honest, too often I opt for something less healthy because it’s easier. Well, this shrimp wrap isn’t just super easy, it’s packed with some great nutrients to help get you through the rest of your afternoon. It literally took me about 5 minutes to make this and it tasted much better than those other quick options I used to settle for. If you’re on a diet, I would skip the butter and you don’t need to put anything in its place. Here’s how I made it! Don’t forget to print out the recipe card for later!
Easy Healthy Shrimp Wrap Recipe

Ingredients:
- 4-5 Extra Large Cooked Shrimp
- 1 Tablespoon Butter
- Handful Spinach
- 1/8 Cup Sundried Tomatoes
- 1/8 Cup Crumbled Blue Cheese
Directions:
- In a frying pan
, place your butter and allow it to melt.
- Add your shrimp to the pan. Make sure they are detailed. Allow them to cook for a couple of minutes in the butter and then remove from heat and set aside.
- While the pan is still warm, place your handful of spinach and cover it for a few minutes until wilted then remove from pan.
- Heat your tortilla in the microwave or for a quick minute in the pan.
- Place your shrimp down the middle of the tortilla in a straight line.
- Add your blue cheese, sundried tomatoes, and spinach alongside the shrimp also in a straight line.
- Fold both ends of your tortilla and then roll it.
- Cut in half and serve.
