The Ultimate Rice Pilaf Recipe You’ve Been Craving [with video tutorial]

So, you need a vegetarian dinner that’s fast, easy and cheap to make, right? No problem! This rice pilaf is all of that AND full of flavor! With food prices on the rise, it’s getting harder and harder to feed a large family without completely busting your budget. Even with my small family of four, I’m feeling the pinch lately. Rice is relatively cheap, filling and easy to customize since it soaks up the flavor from the other ingredients.

In this recipe, we used jasmine rice, which has a bit of a nuttier flavor than plain white rice. You can use any type that you prefer, though. Check out the video how-to, then print out the recipe card for later!

Rice Pilaf Vegetarian Dinner Recipe

Ingredients

  • 1 cup jasmine rice
  • 1/2 cup orzo pasta
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 garlic clove, chopped grated
  • 2 tbsp fresh parsley, chopped
  • 1/2 tsp salt
  • Pinch Black pepper
  • 3 cups vegetable stock

Directions

  • In a large pan, combine oil, butter and onion. Cook 5 minutes, then add in salt, pepper, garlic and parsley. Cook again for 5-6 minutes or until onions are soft
  • Add rice and orzo and cook for another 5 minutes stirring frequently
  • Add in 1/2 of your vegetable stock, stirring until mixed. Cover and simmer on medium heat for 5 minutes.
  • Remove lid, add in second half of stock, stir, then cook covered for 12-15 minutes until rice is tender
  • Plate and serve with pepper and additional fresh parsley
