Potato & Squash Baked Samosa Recipe with Mango Chicken #PataksMom

When I was challenged by Patak’s Canada to make samosa, I was totally clueless. I have never made samosa in my life. So I searched (on Pinterest of course) and discovered that samosa can be either fried or baked. Since I am not a fan of fried food, I decided to go with the baked version. It seems that the most popular type of baked samosa recipe is potato and pea ones. They looked so good.  As usual, I wanted to add my own  spin and use an ingredient that is abundant these days: Butternut squash and an ingredient that will add flavour: Mango Chicken Sauce! Odd combination at first but it turned out amazing!

Potato And Squash Baked Samosa Recipe

Ingredients

  • 1 onion chopped
  • 2 TBSP of olive oil
  • 2 Potatos peeled and diced
  • 1 butternut squash peeled
  • 1 can of Mango Chicken Sauce
  • 1 Pack of pastry sheets. I found them in a specialty store. Some people use Phyllo for the recipe.

Prepare it

  • Preheat oven 350F
  • In a pot, bring water to boil
  • Add diced potato
  • In the mean time, microwave butternut squash for 7 minutes or until tender.
  • Let it cool and dice it.
  • Heat a pan. Add oil.
  • Add onion and cook it until it softens
  • Add potatoes, squash and half of Mango Chicken Sauce
  • Reduce heat and let it simmer for 10 minutes.
  • Add a greased baking sheet to a baking pan.
  • On a large clean cutting board, display your pastry sheets.
  • Cut them in half
  • Scoop one TBSP of filling in the pastry sheet. Fold in triangles.
  • Repeat until you have no longer filling or pastry sheets.
  • Brush the samosa with some melted butter or margarine.
  • Bake for 10 mn until golden brown.

  • As I mentioned above you can make this baked samosa recipe with phyllo, if you prefer.
  • You can reserve some of the filling as an accompanying dish too. It is delicious!
  • Serve this baked vegetable samosa as an appetizer or an accompanying dish with rice or you favourite chicken recipe!
  • It is better to eat them while hot. If you want to reheat them, use the oven, not the microwave.
