Mason Jar Lentil Salad

Ingredients

  • 1/3 cup of feta cheese
  • 1/3 cup of bell pepper
  • 1/3 cup diced tomatoes
  • 1/3 cup zucchini
  • 1/4 cup of diced carrots
  • 1-2 tbsp Greek Dressingmason-jar-lentil-salad-recipe-video– bought or homemade (see recipe below for homemade version)

How to Make It:

  • First, cook your lentils with 2 cups of water in a large pot on medium for around 15 minutes. They will swell when they are ready, then drain them and set aside.
  • Cut up all your veggies

  • Layer each of the other ingredients in one at a time, until you have reached your desired height
  • To serve, close the lid, give it a shake and either eat out of the jar or pour in a bowl.

Easy Greek Dressing

Ingredients:

  • 1 cup olive oil
  • 1 tsp garlic powder
  • 1 tsp oregano
  • 1/2 tsp pepper
  • Pinch of salt
  • 1 tsp dijon mustard
  • 1/2 cup red wine vinegar

To make, whisk all ingredients together.

    I haven’t tried it yet, but it sure would be great on the go lunch idea. My sister always has food in the car when traveling, she calls them car picnic. This would be great for that.
