If I told you that you could make an incredibly delicious healthy diabetic-friendly meal with only 4 ingredients, what would you say? I bet you’d think I was crazy, right? Well, we have an amazing Country-Style Ham & Potato Casserole recipe for you today that proves that I’m really quite sane! The recipe comes from The (affiliate link) 4-Ingredient Diabetic Cookbook, by Nancy Hughes. Check out the recipe, then read on for a bit of Q&A with the author!

COUNTRY-STYLE HAM AND POTATO CASSEROLE RECIPE

SERVES 4, SERVING SIZE 1 1/2 cups, PREP TIME 15 minutes, BAKE TIME 40–45 minutes, STAND TIME 3 minutes

Ingredients:

  • 6 ounces lean smoked deli ham, (preferably Virginia ham), thinly sliced and chopped
  • 1 pound red potatoes, scrubbed and thinly sliced
  • 1 medium onion, thinly sliced
  • 1/3 cup shredded, reduced-fat, sharp cheddar cheese

How to Make it:

  1. Preheat the oven to 350°F.
  1. Place a medium nonstick skillet over medium-high heat until hot. Coat the skillet with nonstick cooking spray, add ham, and cook 5 minutes or until the ham edges are beginning to lightly brown, stirring frequently. Remove from the heat and set the ham aside on a separate plate.
  1. Layer half of the potatoes and half of the onions in the bottom of the skillet. Top with the ham and repeat with layers of potatoes and onions. Sprinkle with black pepper, if desired, and cover tightly with a sheet of foil.
  1. Bake 35–40 minutes or until the potatoes are tender when pierced with a fork. Remove from the oven, top with cheese, and let stand, uncovered, for 3 minutes to melt the cheese and develop flavors.

COOK’S TIP: Nonstick skillets will work fine in 350°F temperatures, even with plastic handles. You may cover the handle with foil, if you like. Or use a 12 × 8-inch glass baking dish (but you’ll miss the flavor added by the skillet drippings).
