My family loves cornbread! While you can make it using one of those cheap little box mixes, the real thing is a million times better!

In fact, my son will only eat homemade cornbread from scratch (or the really high-quality bakery stuff).

While I’m not really a paleo type of girl, I have a lot of friends who are into that diet, so I wanted to find something they’d eat too.

This cornbread recipe isn’t just perfect for those who follow a paleo diet, it’s also gluten-free! I double-checked each ingredient for you to make sure, don’t worry.

  1. Preheat the oven to 350F and line an 8×8 baking pan with parchment paper, or grease it really well.
  2. In a large bowl shift together the dry ingredients – almond and coconut flour, baking soda and salt.
  3. In a medium sized bowl, crack 4 eggs. Add the melted coconut oil (or grass-fed butter or ghee), maple syrup (or honey), almond or coconut milk, apple cider vinegar and whisk well.
  4. Add the wet ingredients to the dry ingredients and gently mix it in. There shouldn’t be any dry spots.
  5. Pour the batter in to the prepared 8×8 pan and spread it well. Tap it slightly to distribute the batter evenly.
  6. Bake for 25 to 30 minute or until top is golden brown and toothpick inserted in center comes out clean.
  7. Let it cool for 10 minutes and then slice it into 16 squares.
  8. Serve warm with butter or jam or any soup or stew.

  • Regarding the melted coconut oil, butter, or ghee: many people who have celiac disease also have dairy sensitivities. If you’re making this for someone who needs a gluten-free diet, stick with the melted coconut oil rather than the butter or ghee.
  • Make sure you use real Maple Syrup, not “maple-flavored” syrup. If you’re spending $1.50 on a big jug of it, it’s not real maple. I also recommend using local honey!
