Fresh mozzarella, tomato, and basil salad

Summer isn’t quite finished, or at least the tomato plants are still blooming! Yes, they are hitting the end of their season. If you’re still enjoying the crisp, juicy flavors of ripe tomatoes, here is a must-try recipe.

The ingredients are simple while the taste is powerful. Side note: while the ingredients are simple, that doesn’t mean you should skimp on quality. Purchase fresh mozzarella (imported from Italy is the best), use vine ripened grape or cherry tomatoes, and snip fresh basil leaves directly from a plant. Oh, and splurge for the balsamic glaze – it’s worth it!

First, slice or dice the mozzarella into bite-sized pieces. Arrange them in a layer on a platter. Next, plop the adorable mini tomatoes over the mozzarella cheese. Next, thinly slice the basil leaves (or cut them using my favorite herb scissors) and sprinkle it over the cheese and tomatoes. 

Pause for just a moment to observe the colors in this dish…the creamy white cheese contrasts the vibrant tomatoes which are distinct from the bright green basil. Ironically, these are the colors of the Italian flag (red, white, and green).

Finally, drizzle some thick balsamic glaze over the top. While original balsamic vinegar will boast the proper flavor, the glaze clings to the foods and adds a lovely decorative element. 

This makes a lovely side dish to any meal! You can also prepare these as individual appetizer bites by sliding a chunk of mozzarella, one basil leaf, and a mini tomato onto a toothpick. After all of the appetizer bites are assembled onto a serving platter, drizzle the balsamic glaze over them.

Ingredients

  • 1 ball of mozzarella cheese
  • 1 cup (approximately) of bite-sized grape or cherry tomatoes
  • 1 cup (approximately) of fresh basil leaves
  • Drizzle of balsamic glaze (not vinegar)

Instructions

  1. Cut the mozzarella cheese into bite-sized chunks or slices, and place in a dish.
  2. Top with whole cherry or grape tomatoes.
  3. Slice the basil leaves into thin strips (or cut them with herb scissors), and sprinkle over the cheese and tomatoes.
  4. Lastly, drizzle the balsamic glaze on top before serving.

Notes
