Looking for an easy healthy vegetarian dinner recipe that you can make quickly on a busy weeknight? We put a meatless spin on a classic with our taco skillet recipe! It has all the yummy goodness of taco night without the added fat (and cost!) of ground meat. The combination of rice with the veggies does a great job of filling you up without weighing your down, making it perfect for a pre-game dinner for your little athletes. Easy Vegetarian Dinner: Taco Skillet Recipe

Ingredients:
- 1/2 green bell pepper
- 1/2 red pepper
- 1/2 onion
- 1/2 can corn
- 1 cup salsa
- packet taco seasoning
- 2 cups instant brown rice
- 1 cup water


Taco Skillet
- 1/2 green bell pepper
- 1/2 red pepper
- 1/2 onion

- 1 cup water
- Dice veggies, saute in on med-high with taco seasoning
- Add in corn, salsa, water, cook for a few minutes
- Add in rice, cover, and heat 15 minutes – stirring frequently until water is absorbed.
- Top with tomatoes, cheese, avocado, and toppings of your choice.
That’s all there is to it! If you want to spice it up a bit, you can add a little hot sauce (or a lot, depending on how spicy you want it!) to the mix. One fabulous thing about this recipe is that you can easily multiply the ingredients to make enough for a larger crowd. It’s also pretty cost-effective. The peppers are the most expensive item, and if you shop smart, you can usually find them on sale for $1 each (at least in my area, maybe they are even cheaper in other places). If you’re planning to serve it to a crowd, you can put out different toppings in pretty bowls and make it kind of like a buffet.
