Looking for easy vegetarian pasta recipes? It doesn’t get much simpler than our creamy tortellini pasta dish! My husband and I constantly work around the clock. We always feel like we have something to do. On nights when we’re on a time-crunch, my husband prepares a quick yet delicious dish that’s creamy, cheesy and oh-so-comforting. Despite being busy, we try to avoid ordering too much “take-out.” We love the idea of preparing home-cooked meals so we strive to think of fairly simple recipes so that we can save on preparation time.
Made with the simplest of ingredients, my husband’s tortellini recipe is perfect for any cheese lover. We pack on the cream and the sharp cheddar, and it makes for a semi-sweet, decadent bowl of pasta. It’s the perfect meal for those nights packed with deadlines and meetings. It’s definitely one of my favorite easy vegetarian pasta recipes. Ready to check it out? Don’t forget to watch the video tutorial and print the recipe card.

This looks like an amazing fall comfort meal. I love pasta dishes so much and adding so much cheesy goodness is a total bonus.
I love tortellini. I have a very similar dish (biggest difference is mine has meat) and it’s always a big hit.
This pasta dish looks delicious! I like that it is so easy as well. That’s my type of meal :)
I have never made tortellini before, I’m interested in making it though because it looks like it holds flavor well.
OMG, this is amazing. My kids would absolutely love this. Bookmarking to make it this weekend, thanks!
This looks like an amazingly yummy vegetarian dish. Though I am not vegetarian, I do like to serve meatless meals from time to time, and I would love to try this.
