It’s hard to find kid-approved recipes for picky eaters that aren’t too boring for the more refined palates in the family, isn’t it? I can’t tell you how many times we’ve all made our own separate small meals because no one could agree on what to make. Pasta is probably the one thing that every likes, although to be honest, my husband will always find a way to add more spice and some sort of meat. The beautiful thing about this cheese pasta recipe is that it’s perfect on its own for the pickier eaters or vegetarians in the family, but can also be upgraded after it’s cooked for those who just can’t live without their meat. • 1 C Ricotta Cheese
  • 2 C shredded mozzarella cheese
  • 1 egg (slightly beaten)
  • 1/4 tsp black pepper
  • 1/4 C chopped basil leaves
  • 1 box of Barilla Rigatoni pasta (cooked and drained)
  • 1/2 C Parmesan cheese (shredded)
  • 1/2 jar of tomato and basil Classico pasta sauce
  1. Preheat over to 350.
  2. Combine mozzarella cheese, egg, basil, pepper, and ricotta cheese.
  3. Combine hot noodles, sauce, and ricotta mixture.
  4. Bake in 11 x 7 glass dish. Sprinkle with mozzarella and Parmesan cheese.
  5. Bake 25 minutes covered.
  6. Bake additional 5 minutes uncovered until cheese is melted.
  7. Scoop out some pasta and add two scoops of Ricotta cheese on top.

For super picky eaters, you can easily leave the scoops of ricotta off of the top without ruining the flavor. I love all things cheese, so I’d definitely leave it on mine, but my son would look at me like I was crazy if I put it on his.

If you have a “must have meat” eater in your family, heat up some of those little precooked chicken strips (like the kind you put in chicken Caesar salad) to stir in. You can also make some yummy turkey or beef meatballs as a side. Personally, I just love to eat this as is with a side of yummy garlic bread!
