I have to confess something: I never liked potato soups! They were either too watery, not enough potatoes or too much cream. But the following potato soup recipe is THE best potato chowder recipe I have ever tasted (and it’s not because I made it). It has the perfect ingredients, right amount of potatoes and most of all, it’s deliciously creamy. Trust me, YOU WANT to know my secret ingredient! It’s Carnation® Evaporated Milk! Creamy Potato Chowder: A healthy soup recipe for your brisk fall days
I have been using Carnation® Evaporated Milk a lot lately. I used it in this delicious butternut squash soup recipe. I also use it in my everyday dishes, like homemade mac and cheese, lasagna recipes and more. I like how easy and simple it is to use.

Let me share with you this delicious potato chowder with Carnation® Evaporated Milk.
Ingredients
- 1 tsp of vegetable oil
- 1 /2 cups of carrots chopped
- 1 ½ cups of celery chopped
- 1 onion chopped
- 2 cloves of garlic chopped
- 2 lbs. of Yukon Gold Potatoes, peeled and chopped in 1
- 4 cups of chicken stock
- 2 cans of Carnation® Regular or 2% Evaporated Milk
- ¼ cup of chopped fresh dill
- salt to taste
Make it
- Heat oil on medium heat in a large pot
- Add next 4 ingredients. Cook and stir occasionally for 5 minutes or until onions are tender
- Add potatoes and stock
- Bring to boil, cover, and lower heat
- Simmer for 15 minutes until potatoes are tender
- Add Carnation® Regular or 2% Evaporated Milk and cook for additional 5 minutes
- Puree half of the soup
- Return to pot and combine well
- Stir in dill and salt to taste
It was so creamy, rich and good that I had to make a second batch the following day. I tried with Carnation® Regular, 2% and Fat Free Evaporated Milk. I find they have the same creaminess. It’s a win-win: less fat for the same creaminess and texture.
