Comforting barley soup

  1. 1 cup barley uncooked
  2. 1 tbsp tomato paste
  3. 1 cup chick peas
  4. 2 onions diced
  5. ½ cup chopped celery
  6. ½ cup minced parsley
  7. 2 TBSP olive oil
  8. Salt, pepper and paprika

Make it


  • In a large soup pot, heat olive oil and onions until onions become soft.
  • Add 1 cup of water, celery, parsley, chick peas and tomato paste. Season with salt, black pepper and salt.Let simmer for 10 mn.
  • Add 8-9 cups of water and bring it to boil.
  • Add barley and let cook for 1hour or until barley is soft, stirring from time to time.
