Cilantro lime steak and shrimp sheet pan dinner

Ingredients:

In the mood for a little surf and turf tonight? Try this delicious cilantro lime steak and shrimp recipe! The flavors are spot on, and since it's made on a sheet pan, cleanup is a breeze. 

  • 2 tsp chili powder
  • 1 1/2 tsp ground cumin
  • 1 tsp ground paprika
  • 1/2 tsp ground coriander
  • Salt and freshly ground black pepper
  • 1 1/2 lbs steak
  • 1 pound of shrimp ( any size/shell off )
  • 2 of each green and yellow bell peppers, cored and sliced into strips
  • 1 medium yellow onion , halved and sliced skin removed
  • 2 tsp. minced garlic
  • 3 Tbsp olive oil
  • 2 limes juiced
  • 1 lime sliced for garnish
  • 3 Tbsp chopped cilantro

Directions:

  • Preheat oven to 400 degrees.
  • Spray an 17 by 12-inch rimmed baking sheet with non-stick cooking spray, then line it with foil or parchment paper.
  • In a small mixing bowl whisk together chili powder, cumin, paprika, coriander, 1 1/2 tsp salt and 1/2 tsp pepper, then set aside.
  • Slice your peppers and onions and spread them out on the baking sheet.
  • Slice the steak into thin strips.
  • Top the pepper & onion mix with steak strips, then sprinkle with the minced garlic and the spicy seasoning.
  • Drizzle olive oil over top of everything then toss to evenly coat.
  • Roast in the oven for 10 minutes then remove from the heat and toss to make sure everything cooks evenly.
  • Place back in the oven for another 10 minutes.
  • Remove from the oven and add the shrimp on top of the steak, then return it to the oven for another 5 minutes.
  • Remove from the oven and drizzle lime juice evenly over top of the mixture.
  • And garnish with fresh lime slices and cilantro.
  • Enjoy!!

  11. Remove from the oven and drizzle lime juice evenly over top of the mixture.
  12. And garnish with fresh lime slices and cilantro.

One little tip that I learned: if you want your veggies to come out crisper, heat up your sheet pan in the oven first! You can throw it in during the preheat and leave it there while you mix your dry ingredients and slice your steak. If you’re planning to make a lot of sheet pan recipes, you’ll want to invest in a really great cookie sheet. I recommend the Wearever Nonstick Pans.
