Chickpea Gyros with Honey Orange Vinaigrette

The Mediterranean offers deep blue waters, crisp white buildings, and mouthwatering food—like incredible gyros. But instead of ground beef and lamb, we’re going to make meatless gyros with roasted chickpeas. And upgrade the traditional cucumber yogurt sauce to a honey orange vinaigrette.

Don’t worry, you won’t sacrifice any flavor in lieu of meat. The chickpeas are tossed in rich olive oil, then seasoned to perfection with paprika, cumin, cayenne pepper, onion powder, garlic powder, and pepper. Want to spice them up even more? Red pepper flakes add an extra touch. Too spicy to be kid-friendly? Eliminate the cayenne pepper.

Roast the chickpeas until they are soft on the inside and slightly crispy on the exterior, about thrity minutes in the oven.

Meanwhile, toss all of the vinagriette ingredients in the blender for one minute.

Once the chickpeas are finished, it’s time to assemble your perfect gyro. First layer the chickpeas on your pita bread or tortilla. Then top with any (or all) of the following: red onion, feta cheese, leaf lettuce, fresh tomatoes, bell peppers, or sliced cucumbers. Then drizzle the honey orange vinaigrette over the top. 

Rolled-up gyros are delicious, but slightly messy. If you (or your kiddos) need a different form of Mediterranean gyros, opt for a fresh salad or mixed vegetables.

Ingredients

  • For the chickpeas:
  • 1 can of chickpeas, drained and rinsed
  • 1 Tbsp olive oil
  • 1 tsp paprika
  • 1 tsp cumin
  • ½ tsp pepper
  • ½ tsp cayenne pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • For the honey orange vinagriette:
  • ½ cup orange juice
  • ½ cup olive oil
  • ¼ cup honey
  • 2 tsp yellow mustard
  • Pinch salt and pepper
  • Gyro toppings:
  • Pita bread or tortilla
  • Red onion
  • Feta cheese
  • Leaf lettuce
  • Fresh tomatoes
  • Bell peppers
  • Sliced cucumbers

Instructions

  1. Preheat oven to 375°F.
  2. Toss the chickpeas in olive oil and spices.
  3. Bake for thirty minutes, stirring after fifteen minutes.
  4. Combine all of the vinaigrette dressings in a blender, and run on medium speed to combine.
  5. Assemble your gyro by adding the chickpeas and desired toppings to the pita bread or tortilla, then drizzle the vinaigrette on top.
