- 2 tbsp butter
- 1 onion, chopped
- 1 clove garlic, minced
- 1 medium zucchini, sliced
- ½ red pepper diced
- 1 cup shredded cheese
- 6 eggs
- ¼ cup milk
- ½ tsp dried basil
- Salt and pepper
Make it
- Melt butter over medium-high heat. Cook onion, garlic, zucchini and red pepper until softened.
- In a bowl, beat eggs with milk and seasoning.
- Add the vegetables and cheese
- Spread in a greased 9-inch plate.
